Apricot Preserves

makes about 3 small jars (mine are from the Container Store) or about 16 oz

2 lbs apricots – chopped

2 cups sugar

2 tbsp fresh lemon juice

2 tsp fresh lemon zest

1 tsp salt

Bring all ingredients to a boil. Reduce to a simmer and cook for 30 minutes or until the preserves reach a desired consistancy. Remove the mixture from the heat and let cool at room temperature before canning.

Easy!
